1

Season chicken thighs with kosher salt and black pepper on both sides.

2

Dredge chicken thighs in flour on both sides.

3

Heat butter and olive oil in a large skillet until melted and hot.

4

Add chicken thighs to the skillet and brown for 2 and 3/4 minutes on each side until golden brown.

5

Remove chicken from skillet and set aside.

6

Add sliced onion to the skillet and sauté for a couple of minutes until softened.

7

Make space in the skillet and add minced garlic, cooking until fragrant.

8

Add quartered cremini mushrooms and sauté for about 5-6 minutes, seasoning with salt and pepper.

9

Pour in half a cup of white wine and mix, allowing most of the liquid to evaporate.

10

Stir in 2 tablespoons of tomato paste until well mixed.

11

Add a can of diced tomatoes and 2 tablespoons of capers with a bit of their juice, bringing the mixture to a boil.

12

Nestle the browned chicken thighs back into the sauce, cover, and simmer on medium heat for 15 minutes.

13

Remove the lid and let the sauce reduce for another 10 minutes to thicken it up.

14

Prepare mashed potatoes using chicken broth instead of water, adding butter, garlic powder, salt, pepper, sour cream, and chopped parsley to the potato flakes and mixing well.
