Creamy Vegan Mushroom Artichoke Pasta

Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat.

Add the minced garlic and sauté for about 1 minute until fragrant.

Add the sliced mushrooms to the skillet and cook for about 5-7 minutes until they are browned and tender.

Stir in the chopped artichoke hearts, vegetable broth, nutritional yeast, oregano, salt, black pepper, and red pepper flakes (if using).

Cook for an additional 5 minutes, stirring occasionally, until heated through.

Add the cooked pasta to the skillet and toss to combine with the mushroom and artichoke mixture.

Cook for another 2-3 minutes to allow the flavors to meld together.

Remove from heat and garnish with fresh parsley before serving.
