Prepare the flank steak by trimming off tough edges and removing the membrane.
Let the flank steak sit at room temperature for a while.
Blanch the potatoes in boiling water for 5-6 minutes, then let them rest.
In a skillet, heat olive oil and sauté both red and green onions with a pinch of salt.
Add 5-6 tablespoons of sugar to the onions and cook for 2-3 minutes until they start to soften.
Pour in a bit of whiskey and let it reduce for about 7 minutes until the onions are soft.
Transfer the caramelized onions to a bowl and clean the skillet.
Season the blanched potatoes with salt, rosemary, red pepper flakes, and black pepper, then mix well.
Cook the seasoned potatoes on a hot grill for about 7-8 minutes on each side until golden brown.
Season the flank steak with salt and black pepper and grill on high heat for 6-7 minutes on one side.
Flip the flank steak and start adding the cheese mixture (mozzarella and parmesan) on top.
Cover the steak with aluminum foil to help the cheese melt faster, cooking for an additional 5 minutes.
Serve the grilled flank steak topped with the caramelized onions and alongside the grilled potatoes.
