Soak 500 g of white beans overnight in 1.5 L of hot water.

Drain the beans.

Prepare the rest of the ingredients: 2.5 teaspoons of salt, 0.5 teaspoon of black pepper, 1.5 teaspoons of turmeric, 2 tablespoons of cumin, 1.5 teaspoons of ginger, 2 tablespoons of sweet paprika, 40 g of tomato paste, 4 crushed garlic cloves, 4 tablespoons of mixed chopped parsley and cilantro, 400 g of tomato puree, and 250 g of grated and drained onions.

In a pressure cooker, add bones (optional) and 120 ml of olive oil over medium-high heat.

Add the garlic and toss to render the fat from the bones.

Add the grated onions and the spices (salt, black pepper, turmeric, cumin, ginger, sweet paprika).

Add the tomato puree and stir.

Add the soaked white beans and top with 900 ml of warm water.

Close the pressure cooker and cook for 40 to 45 minutes.

Place the red chili on top to steam and let the pot simmer until the desired consistency is reached.
