Wash the rice very well and transfer it into a bowl.
Add vegetable broth to the rice and let it soak for 45 minutes.
Chop the white part of the leek, garlic, and white onion finely.
Dice the red pepper and shred the carrot.
Heat olive oil in a pan over medium-low heat.
Add leek, onion, and garlic to the pan and sweat for 7-8 minutes until translucent.
Add diced red pepper and carrot to the pan and sauté for another 2 minutes.
Add the soaked rice to the pan along with chicken broth powder and black pepper, mixing well.
Add some butter and cover the pan, bringing it to a boil.
Once boiling, reduce heat to medium-low and let it simmer for 12-15 minutes.
After cooking, turn off the heat and let it rest covered for 10-15 minutes before serving.
Fluff the rice gently with a fork or chopsticks before serving.
Top with green onion and serve with plain yogurt.
