Sweet Potato and Lentil Curry

Chop one medium-sized white onion.
De-seed and chop one red pepper.
Peel three medium-sized sweet potatoes and cut them into fairly large chunks.
Roughly chop three cloves of garlic.
Heat two tablespoons of coconut oil in a pot until warm.
Add the chopped onions to the pot and cook over medium heat until soft and translucent, stirring occasionally.
Add one teaspoon of dried thyme, one teaspoon of ground turmeric, a pinch of hot chili powder, one and a half tablespoons of hot curry powder, and one teaspoon of garam masala to the onions; stir to combine.
Add one tablespoon of madras curry powder and stir again.
Add the chopped red pepper to the pot and stir.
Peel and grate about one teaspoon of fresh ginger and add it to the pot along with the three cloves of crushed garlic.
If the mixture gets dry, add an extra teaspoon of coconut oil.
Add one tablespoon of tomato paste and stir to combine.
Add the sweet potatoes to the pot and stir to coat them in the herbs and spices.
Rinse 113 grams of red lentils under cold water and then stir them into the pot.
Pour in the coconut milk and turn the heat from low to medium.
Add about one cup of boiling hot water and stir well.
Cover the pot with a lid and check and stir every few minutes while it cooks.
After some time, check the curry; it should be thickening but not ready yet, so cover and cook some more.
Add salt to taste and check the consistency; the lentils should have thickened the sauce nicely and the sweet potatoes should be soft.
Remove from heat and serve.
