Welcome to the channel, today I'm making sweet potato and lentil curry with mushrooms.

In a glass bowl, I have 4 sweet potatoes, but I might not use all of them.

I've got fresh herbs: at least 1 stalk of scallion, 4 cloves of garlic, a little fresh ginger, and at least 1 tablespoon of fresh thyme.

I've cut half an onion, 2 medium tomatoes, half a sweet pepper, and a little carrot.

For seasoning, I have 2 teaspoons of all-purpose seasoning, 1 teaspoon of black pepper, and 1 teaspoon of salt.

I'll be using at least 2 cups of red lentils and 1 tablespoon of curry powder.

I have 250 grams of mushrooms, which are optional. You can also use chickpeas instead of lentils if you prefer.

First, peel and wash the sweet potatoes, then cut them into small pieces.

Next, wash the mushrooms and cut them in half.

Heat a pot on the stove and add over 1 tablespoon of olive oil, letting it heat for about 15 seconds.

Add the onions to the pot and sauté them for a moment before adding the garlic and curry powder, cooking for another 15 seconds.

Add the ginger, carrot, and tomatoes, cooking for about 20 seconds.

Add a little red chili, then the lentils, and cook for another 20 seconds.

Now, add the sweet potatoes and mix everything together, cooking for 1 minute.

After 1 minute, add the mushrooms and let them cook for another minute.

Pour in 3 cups of hot water from the kettle and add the remaining seasonings, stirring well.

Let it cook for 10 minutes before adding the coconut milk.

After 10 minutes, check the pot; it should smell delicious.

Add 1 can of coconut milk, fresh thyme, scallion, and any remaining sweet pepper.

Cover and let it cook for 20 minutes until the sweet potatoes are soft.
