Cook the lasagna noodles according to the instructions on the package.
Drain the noodles and leave them soaking in cold water to avoid sticking, then drain them again before assembling the lasagna.
Heat olive oil in a large pan over medium-high heat.
Add chicken breasts, season with salt and pepper, and cook for about 5-7 minutes.
Flip the chicken over, lower the heat to medium, and cook for another 5-7 minutes or until no longer pink.
Remove the chicken from the pan and chop into small pieces.
In the same pan, heat more oil over medium heat and add chopped white onion, cooking for about 3-5 minutes until translucent.
Add chopped garlic and cook for another minute.
Add cleaned and sliced mushrooms, cooking for about 5 minutes until soft.
Season with salt and pepper, then add heavy cream and stir, cooking for about 2 minutes before setting the mushrooms aside.
To make the bechamel sauce, melt butter in a medium saucepan over medium-low heat.
Add all-purpose flour and stir until well incorporated and lump-free.
Gradually add milk while stirring constantly to avoid lumps, then bring the sauce to a boil and cook for about 10 minutes.
Remove from heat and season with salt, pepper, and a little nutmeg.
Cover the baking pan with oil or cooking spray, then add a little white sauce to the bottom.
Layer with lasagna noodles, followed by 1/3 of the white sauce, chopped chicken, mushrooms, and shredded mozzarella cheese.
Repeat the layers of pasta, white sauce, chicken, mushrooms, and cheese.
Finish with a final layer of lasagna noodles, white sauce, and top with shredded mozzarella and grated Parmesan cheese.
Cover the lasagna with nonstick aluminum foil or regular foil sprayed with cooking spray and bake at 375°F for about 20-25 minutes.
Remove the foil and bake for another 15-20 minutes until the cheese is melted.
