Shoofly Pie

4 c flour
3 T sugar
1 tsp kosher salt
1 c cold, cubed butter
3/4 c chilled water with 2 T lemon juice or apple cider vinegar
3 c flour
1 c light brown sugar
1/2 c shortening
1 tsp kosher salt
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves
2 1/4 c boiling water with 1/2 tsp baking soda added
1 1/2 c molasses
2 egg yolks

In the bowl of a food processor, add flour, sugar and salt. Give it a whiz around.

Add in half the butter, give it a whiz as shown, and add in the rest.

Drizzle in water while it's running. Stop when it comes together.

Chill at least for 30 minutes. Line two pans.

Cut together flour, light brown sugar, shortening, kosher salt, cinnamon, nutmeg, ginger, and cloves with a pastry cutter.

Whisk molasses and egg yolks together to combine. Temper in boiling water.

Divide liquid into both crusts. Divide crumbs. Use a knife to mix a little.

Bake at 400° until the crust starts to brown (20 min.) and turn down to 350° and bake until firm (10-15 min.).
