Smash 5 cloves of garlic and finely chop them.

Pat 600 grams of boneless chicken thighs dry with a paper towel and season both sides with salt and pepper.

Heat 2 tablespoons of oil in a large pan over medium-high heat.

Place the chicken skin side down in the pan and cook until browned, about 8 minutes total, flipping halfway through.
