1 cup shredded cheddar cheese (tightly packed cup)
1/4 tsp cooking/kosher salt
1/2 tsp black pepper
30g / 2 tbsp unsalted butter
1 onion (finely diced)
1 tbsp cooking/kosher salt (for boiling water)
25g / 1 1/2 tbsp unsalted butter (per 8 - 10 pierogis)
Sour cream (for serving)
