Wash the kale thoroughly and remove the stems by folding the leaves over and slicing along the stem.
Cut the kale into bite-sized pieces, about an inch apart, and place them in a baking dish.
Chop 4-5 cloves of garlic by smashing them with the side of a knife to peel, then chopping them finely.
Combine the chopped garlic with the kale in the baking dish.
Drizzle about 2 tablespoons of olive oil over the kale and garlic mixture, adjusting to taste.
Sprinkle salt and black pepper over the mixture to taste.
Massage the kale with the oil and seasonings for about 30 seconds until it changes color and softens slightly.
Spread the kale mixture evenly in the baking dish.
Preheat the convection oven to 375°F (190°C).
Roast the kale in the oven for about 20 minutes, checking at 15 minutes to turn it for even browning.
After 20 minutes, remove the kale from the oven and let it cool slightly before serving.
