Herb Roasted Sweet Potatoes

Peel the sweet potatoes using a sharp pairing knife or potato peeler, cutting deeper if there are blemishes.
Chop the peeled sweet potatoes into large cubes.
Preheat the oven to 400°F (204°C).
In a large bowl, drizzle about 2.5 to 3 tablespoons of olive oil over the sweet potatoes.
Season with sea salt and black pepper to taste.
Add 1 tablespoon of chopped fresh rosemary and the leaves of fresh thyme to the bowl.
Crush 3 small cloves of garlic and add them to the mixture.
Add 4 halved shallots to the bowl and mix everything together with your hands.
Line a roasting tray with parchment paper and spread the sweet potato mixture evenly on it.
Roast in the preheated oven at 400°F for 35 minutes, tossing halfway through after 15 minutes.
After roasting, finish with chopped spring onion (scallions) on top before serving.
