20 g vegetable oil
10 g grated garlic
10 g grated ginger
25 g miso paste
10 g soy sauce
800 g vegetable stock
¼ tsp chili pepper
1 sheet nori
100 g green beans
100 g bok choy
15 frozen gyoza
100 g water
20 g oil
100 g smoked tofu

Heat 20 g vegetable oil in a pot over medium heat.

Add 10 g grated garlic, 10 g grated ginger, and ¼ tsp chili pepper. Stir and sauté for 2 minutes until fragrant.

Stir in 25 g miso paste and 10 g soy sauce until well combined.

Pour in 800 g vegetable stock and stir well. Bring to a gentle boil, then let it simmer for 2 minutes.

Crumble in 1 sheet of nori and let the broth simmer for another 3 minutes.

Place a steamer over the broth and add 100 g green beans. Cover and steam for 5 minutes.

Add 100 g bok choy and steam for another 5 minutes. Once done, remove the steamer and set the veggies aside.

Heat 10 g oil in a pan over medium heat. Add 100 g smoked tofu, cooking each side for 2–3 minutes until golden and crispy. Set aside.

Heat 10 g oil in the same pan over medium-high heat. Place 15 frozen gyoza flat side down and fry for 3-5 minutes until the bottoms turn golden.

Pour in 100 g water, cover immediately with a lid, and turn the heat to low. Let the gyoza steam for 5–7 minutes until fully cooked.

Scoop the broth, veggies, gyoza, and tofu into serving bowls. Pour in extra broth and garnish with green onions for a fresh touch.
