400 ml stock
200 ml cream (20%)
150 g orzo
40 g grated cheese
20 g red onion

Fry 20 g of red onion in cooking oil for 1-2 minutes over medium heat.

Add 300 g of button mushrooms and 300 g of king oyster mushrooms and fry for 7-8 minutes.

Season with salt, pepper, and dried garlic, then stir and fry for another 2 minutes.

Remove mushrooms from the pan.

Reduce the heat to low and add 150 g of orzo and 400 ml of stock.

Stir, cover, and let sit for 5 minutes.

Stir again and let sit for another 5 minutes.

Add 200 ml of cream and 40 g of grated cheese.

Stir and let sit for 2-3 minutes until thick.

Turn off the heat and add the mushrooms back to the pan.

Mix well and garnish with Parmesan and spring onions.
