Mix 40g warm water and 7g instant dry yeast together.
Add 35g bread flour and mix thoroughly.
Cover the mixture and wait for 15 minutes.
After 30 minutes, add 380g all-purpose flour and 10g sugar to a bowl and mix with a whisk.
Pour in 210g cold water.
Add the sponge dough to the flour mixture and mix the ingredients.
Knead the dough for 2-3 minutes until slightly sticky.
Add 7g salt and let the dough rest for 20 minutes.
After 20 minutes, transfer the dough to the counter and knead until smooth.
Add 20g unsalted butter and knead until the dough is soft and not sticky.
Place the dough in a clean bowl and cover it; let it rest at room temperature for 20 minutes.
After 20 minutes, divide the dough into 6 equal parts.
Shape each piece into a long oval and seal the ends tightly.
Cover the shaped dough and let it rest at room temperature until it doubles in size.
Preheat the oven to 200℃ (392℉).
Bake the rolls for 13-15 minutes, placing a bowl of hot water on the bottom of the oven for steaming.
