Preheat the oven to 375°F (190°C).
Drain and rinse the green jackfruit in brine, then place it into a food processor and pulse until it is flaked but still in chunks.
Transfer the pulsed jackfruit into a bowl.
Add 1.5 cups of vital wheat gluten to the bowl with jackfruit.
Add 1 teaspoon of yeast extract, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/4 cup of nutritional yeast, 1 tablespoon of white wine vinegar, 1/2 teaspoon of sesame oil, 1.5 tablespoons of maple syrup, 1 teaspoon of pork bouillon, 3/4 cup of water, 1 teaspoon of smoked paprika, 1 teaspoon of liquid smoke, and 1/2 teaspoon of beetroot powder to the bowl.
Mix all ingredients together until a homogeneous mass forms, adding more water as needed.
Grease a pan with canola oil and transfer the mixture into the pan, pressing it tightly into the corners to eliminate air gaps.
Cut the mixture into rib shapes using a thin knife, making sure to cut through the strands of jackfruit and gluten.
Bake in the preheated oven for 20 minutes.
After 20 minutes, run a knife around the cuts to redefine them and ensure nothing is sticking.
Spread a layer of barbecue sauce over the ribs, ensuring it gets into the cuts but not on the sides.
Return the ribs to the oven and bake for another 30 minutes.
After 30 minutes, remove the ribs from the oven and let them cool before transferring to the fridge for several hours or overnight to firm up (optional).
If serving immediately, transfer the ribs to an oiled baking tray and separate them.
Add more barbecue sauce over the ribs and smear it around to coat them well.
Return the ribs to the oven for an additional 10 minutes.
After 10 minutes, remove the ribs from the oven, cut into them to check the texture, and serve.
