Heat a skillet over medium heat.

Place a tortilla in the skillet.

Sprinkle cheddar and mozzarella cheese evenly over half of the tortilla.

Add the cooked boneless chicken, capsicum, onion, carrots, olives, jalapeno, and spices on top of the cheese.

Fold the tortilla in half to cover the filling.

Cook until the bottom is golden brown, about 2-3 minutes.

Flip the quesadilla and cook the other side until golden and cheese is melted.

Remove from skillet and let cool slightly.

Cut into wedges and serve with coriander.
