From-Scratch Chocolate Protein Pudding (No Protein Powder!) — Healthy Dessert Recipe

Chocolate Protein Pudding
Add gelatin into a large mixing bowl.
Pour 1/4 cup of heavy whipping cream over the gelatin and mix immediately with a fork to avoid clumps.
Separate 3 large eggs, placing the yolks in a medium mixing bowl and saving the whites for later use.
In a 3-quart pot, add 1 cup of beef bone broth.
Add 1 cup of whole milk to the pot.
Add 113 g of cane sugar and 43 g of Dutch cocoa powder to the pot.
Heat the mixture over low to medium heat until the sugar and cocoa are completely combined, ensuring it doesn't boil and using a drink thermometer to reach 140°F.
Once at 140°F, remove the pot from the heat.
Slowly add about 1 cup of the hot liquid to the egg yolks while whisking continuously to temper the yolks.
Return the egg and milk mixture back to the pot.
Add the gelatin mixture into the pot and whisk to combine, even if clumpy.
Put the pot back on low to medium heat and simmer for about 5 minutes while whisking.
Remove from heat and add butter, whisking to combine.
Add ground vanilla bean and whisk again.
Stir in 1/4 cup of creme fraiche until fully combined.
Transfer the pudding to a large mixing bowl and cover with plastic wrap, pressing it down to touch the pudding to prevent a film from forming.
Chill the pudding in the fridge until set.
