Start by preparing the ingredients: thick cut bacon, bell peppers, potatoes, and maple sausage.
Place the bacon in a cold cast iron skillet and turn the heat to medium to keep it straight while cooking.
Use a splatter guard to prevent mess while cooking the bacon.
Remove the bacon from the skillet and place it on a plate with a napkin to absorb excess grease.
Add the maple sausage links to the skillet and brown them on all sides, ensuring they reach an internal temperature of 165°F using a meat thermometer.
Once the sausage is browned, remove it from the skillet and set it aside.
Cut four potatoes into cubes with the skin on, aiming for a hash brown texture.
Add the cubed potatoes to the skillet and keep the heat at medium. Allow them to brown without stirring too much.
Season the potatoes with a couple of generous pinches of salt and freshly ground black pepper, along with some white pepper for flavor.
Stir the potatoes occasionally to ensure even cooking and browning.
Once the potatoes are nearly cooked, add diced onions to the skillet and mix them in.
Make small indentations in the potato mixture for the eggs.
Crack eggs into the indentations, cover the skillet with a lid or foil to steam the eggs, and cook until the eggs are set to your liking.
Season the eggs with salt and pepper while they cook.
