Boil the potatoes in their skins for about 25 minutes. Let them cool, then peel and cut into thick slices.

Finely chop the chives and place them in a bowl.

Cut the onion into fairly wide slices.

Crack the eggs into a bowl, add salt, pepper, and milk, and beat everything with a hand whisk.

In a larger pan, add some of the clarified butter, then add the sliced onion and bacon cut into small cubes. Fry over medium heat for 4-5 minutes, then transfer to a bowl.

In the same pan, melt another part of the butter, then place some of the potato slices on it, frying over medium heat for about 8 minutes on both sides. Remove the fried potatoes to a plate.

Place the fried potato slices back in the pan, pour the egg mixture over them, and sprinkle with the fried onion and bacon. Fry over low heat for about 10 minutes.
