Fry bacon in a cast iron skillet until crispy.

Drain some bacon grease, leaving about a tablespoon in the skillet.

Crack 4 eggs into the skillet with the bacon grease and fry them.

Drizzle 1-2 tablespoons of olive oil into another pan for the spinach.

Add about 4 big handfuls of spinach to the pan and sauté on medium-high heat.

Sprinkle salt, black pepper, and garlic on the spinach as it wilts.

In a bowl, combine about half a cup of light sour cream and a few drops of hot sauce, then stir to mix.
