Egyptian Style Fava Beans with Garlic & Tomato

Originating from ancient Egypt, Ful Medames is a staple breakfast dish made from fava beans, often enjoyed with bread. It reflects the agricultural heritage of the Nile Valley and is a symbol of Egyptian hospitality. Today, it is not only popular in Egypt but has also found its way into the cuisines of various Middle Eastern countries, often served with different toppings and sides.

Heat a medium skillet over high heat.
Add 2-3 tablespoons of olive oil to the skillet.
Add chopped onion and red chili, sauté until the onion changes color.
Add a pinch of salt while sautéing the onion.
Once the onion is browned, add minced garlic and sauté until golden.
Lower the heat and add chopped tomatoes, cover to keep the garlic aroma.
Cook until the tomatoes are softened and blended.
Add fava beans with their liquid and bring to a boil.
Stir in salt, lemon juice, cumin, and dried coriander.
Reduce heat to low and simmer for about 3-4 minutes until the fava beans absorb the mixture.
If needed, add more fava bean liquid and adjust salt.
Serve warm, garnished with parsley and a drizzle of olive oil.
