3 pieces overripe bananas (290g)
2 eggs
3/4 cup sugar (150g)
3/4 cup oil (180ml)
1/3 cup milk (80ml)
3 tbsp plain yogurt (45g)
1 tsp vanilla extract (5ml)
1/2 tsp salt (3g)
1 and 1/2 cup all purpose flour (190g)
1 tsp baking powder (5g)
1 tsp baking soda (5g)

Preheat oven at 170ºC(340ºF). Mash 3 overripe bananas, set aside.

Beat together eggs, sugar and oil until light and fluffy.

Add milk, yogurt, vanilla and salt. Mix well.

Sift in flour, baking powder and baking soda. Mix until no lumps are visible. Do not over mix.

Add mashed bananas. Mix just until combined.

Grease an 8 inch pan and line with parchment paper. Place batter in the pan.

Bake in a preheated oven for 35 to 40 minutes or until toothpick comes out clean when inserted.

Let it cool down for a while. Transfer to a serving plate.
