Cut the chuck roast into cubes, about 1.5 by 1.5 inches.
Remove some fatty pieces from the chuck roast.
Cube the steak tips if not already cut.
Heat an induction burner to medium high and place a Dutch oven on it.
Add 2 tablespoons of beef tallow to the Dutch oven.
Slowly add the cubed meat to the pot and mix.
Brown the meat for a few minutes until nicely browned.
Add 1 diced medium yellow onion to the pot and mix well.
Add 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 1 tablespoon of black pepper, 1 tablespoon of salt, and 1 tablespoon of ground cumin to the pot and mix well.
Pour in 4 cups of hot water and mix again.
Bring the mixture to a boil, then cover the Dutch oven and reduce the heat to low to simmer for 2 to 3 hours.
After 1.5 hours, check the meat for tenderness and taste for seasoning.
Add a can of fire roasted tomatoes and additional cumin to taste, then mix well.
Increase the heat and cook uncovered for about 1 hour to evaporate some liquid.
Prepare homemade tortillas by adding 4 cups of white wing tortilla mix to a bowl.
Add 1 cup of warm water to the tortilla mix and knead until combined.
If the dough is sticky, add a little more flour.
Knead the dough for about 5 minutes until smooth.
Let the dough rest for 15 minutes covered with a damp cloth.
Divide the dough into about 16 balls.
Use a tortilla press to flatten each dough ball into a tortilla and cook until done.
