Cut the beef chuck roast into cubes and place in a six-quart crock pot.
Chop half of an onion and add to the slow cooker.
Chop and dice a Roma tomato and add to the slow cooker.
Add four cloves of garlic to the slow cooker.
Add onion powder, garlic powder, and cracked black pepper to the slow cooker.
Grind cumin seeds and black peppercorns and add one to one and a half teaspoons to the slow cooker.
Add Maggie seasoning for color and flavor.
Pour in beef broth into the slow cooker.
Make a flour slurry by mixing flour with beef broth and pour into the slow cooker.
Add salt and two bay leaves to the slow cooker.
Cover and set to high, cooking for about 4.5 to 5 hours.
Prepare Mexican-style red rice by rinsing one cup of long grain rice in cold water and draining.
Toast the rice in a preheated pan with two tablespoons of cooking oil over medium low heat until fragrant and golden.
Add sliced onion and sauté for about a minute.
Add minced garlic and quickly sauté.
Add ground cumin and black pepper, then one tablespoon of chicken bouillon powder.
Add about 5 oz of tomato sauce and two cups of water, mix, and bring to a simmer.
Cover and lower heat to low, cooking for 15 to 18 minutes without lifting the lid.
After cooking, let the rice sit for 10 minutes before fluffing and serving.
Make soft flour tortillas using self-rising flour and a 12 oz can of evaporated milk, mixing until a dough forms.
Knead the dough until smooth, dividing into 15 to 20 dough balls and letting rest for 15 to 20 minutes.
Roll out each dough ball and cook on a preheated electric griddle at 500°F until bubbling and cooked through.
