Cauliflower Potato Salad

1 medium head of cauliflower, cut into florets
2 medium potatoes, peeled and diced
1/2 cup mayonnaise
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
1/4 tsp salt
1/4 cup chopped green onions
1/4 cup chopped fresh parsley

Bring a large pot of salted water to a boil.

Add the diced potatoes and cook for about 10 minutes until tender. Remove the potatoes and set aside.

In the same pot, add the cauliflower florets and cook for about 5 minutes until tender but still crisp. Drain and let cool.
