Cauliflower Potato Salad

1 medium head cauliflower
2 stalks celery, diced
1/4 cup chopped green onions
2 tablespoons olive oil
1 tablespoon Dijon mustard
1/2 cup mayonnaise
1/2 cup pickles, diced
1/4 cup chopped parsley
1/4 teaspoon salt
1/4 teaspoon black pepper
4 hard-boiled eggs, chopped

Steam the cauliflower in a pot of water using a steamer basket or pressure cooker until fork tender, then cool completely.
