Knead the dough for about 5 minutes until elastic, then cover and let rest for 30 minutes.
Sauté chopped onion and minced garlic in olive oil until translucent, about 3-4 minutes.
Add spinach to the pan and cook until wilted, about 2 minutes; remove from heat.
In a bowl, combine cooked spinach mixture, crumbled feta, black pepper, chopped parsley, lemon juice, and beaten egg.
Divide the rested dough into equal portions and roll each into a thin circle.
Place a generous spoonful of the spinach-feta mixture in the center of each dough circle.
Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Brush the tops of the filled flatbreads with melted butter and sprinkle with sesame seeds.
Bake for 20-25 minutes or until golden brown.
Remove from the oven and let cool slightly before serving.
