1

Soak three bundles of thin rice vermicelli noodles in room temperature water for about 10 minutes.

2

Prepare the ingredients: chop two stocks of green onions into 2-inch pieces, and slice half of an onion from top to bottom.

3

Slice half of a red bell pepper into strips, removing the seeds and inside.

4

Cut about 4 oz (120 g) of leftover barbecue pork into slivers.

5

Beat two eggs in a bowl and set aside.

6

In the same bowl, add half a teaspoon of sugar, a quarter teaspoon of ground white pepper, one tablespoon of soy sauce, one teaspoon of dark soy sauce, and one tablespoon of oyster sauce; stir to combine.

7

Heat a wok over medium-high heat until it starts to smoke, then add one tablespoon of avocado oil.

8

Drain the soaked vermicelli noodles and add them to the wok; sear on one side for about a minute, then flip to sear the other side.

9

Remove the noodles from the wok and snip them a couple of times for easier eating; set aside.

10

Clean the wok and return it to medium-high heat, adding another tablespoon of avocado oil.

11

Add the beaten eggs to the hot wok, season with a little salt, and scramble until cooked; remove and set aside.

12

Add another tablespoon of avocado oil to the wok and add 12 small shrimp, cooking for about a minute until they are just cooked through; remove and set aside with the eggs.

13

Add another tablespoon of avocado oil to the wok, then add the chopped onions and red bell pepper; cook for about 2 minutes until they are slightly tender.

14

Add about 3 oz (90 g) of bean sprouts to the wok and cook for about a minute.

15

Return the noodles to the wok along with the cooked pork, shrimp, and eggs; add the prepared sauce and mix everything together until the noodles are evenly coated.

16

Add the remaining green onions and a drizzle of sesame oil (about a teaspoon); give everything one final toss.

17

Turn off the heat and serve the fried noodles on a platter.
