Soak 160 g of dry rice noodles in room temperature water for 35 to 45 minutes, then remove and cut them in half if desired.

In a bowl, crack in 2 eggs, add 2 tbsp of water, white pepper, and salt to taste, then beat and set aside.

Prepare the sauce by mixing 2 tbsp of fish sauce, 3/4 tbsp of dark soy sauce, 3 tbsp of water, and a few dashes of white pepper, then set aside.

Prepare the vegetables: cut the white and green parts of the scallion into 1 and 1/2 inch strips, slice 1 medium carrot into thin strips, and cut bok choy and cabbage into strips.

In a pan, heat 2 tbsp of oil, then pour in the beaten eggs and spread into a thin crepe, cooking for about a minute before folding and removing from the pan.

In the same pan, add more oil if needed and stir-fry the white parts of the scallion and carrots for about 1 minute.

Add the cabbage and stir-fry for 30 seconds, then add the stem part of the bok choy for 15 to 20 seconds, followed by the green parts of the bok choy until wilted, adding a little salt.

Add the soaked vermicelli noodles to the pan, mixing in half first, then the balance, and combine well with the vegetables.

Pour the sauce mixture around the sides of the pan and mix everything quickly.

Add the green parts of the scallion, 1 tsp of sesame oil, and a dash or two of white pepper, then mix well before turning off the heat.

Slice the cooked egg ribbons thinly and plate the vermicelli, adding the egg ribbons, chili oil, and chili crisp.
