1 jalapeno chili, chopped

1 cup celery, chopped
1 cup carrot, chopped
4 cloves crushed garlic
2 bay leaves
1 teaspoon fennel seeds
2 tablespoons olive oil
1 cup red wine
28 oz canned tomatoes (or tomato pulp)
1 cup tomato sofrito
1 cup beef stock or chicken stock
1 teaspoon salt
1/2 teaspoon black pepper
12 oz rigatoni
1/2 cup Parmesan cheese, grated

Dice the pork shoulder or pork butt into about three-quarter inch pieces.

Chop fresh rosemary as finely as possible.

Dice red onion to the same size as your thumbnail.
