Jamaican Peas and Rice

1 can (15 oz) red kidney beans, drained and rinsed
1 can (14 oz) coconut milk
2 cups long-grain white rice
1 tsp thyme, 1/2 tsp allspice, 1/2 tsp black pepper, 1/2 tsp salt

Rinse the rice under cold water until the water runs clear, then drain.

In a large pot, heat a little oil over medium heat and sauté the chopped onion and minced garlic until translucent.

Add the drained kidney beans, coconut milk, vegetable broth, thyme, allspice, black pepper, and salt to the pot. Stir to combine.

Bring the mixture to a boil, then add the rinsed rice and the whole Scotch bonnet pepper (if using).

Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.

Remove the Scotch bonnet pepper before serving to avoid excessive heat.

Fluff the rice with a fork and stir in the chopped green onions.
