1 cup milk
2 tbsp sugar
1 packet (2 1/4 tsp) active dry yeast
4 cups all-purpose flour
as needed cooking spray

Heat the milk to a temperature of 100 to 110° F.

Add warm milk to a large bowl and stir in sugar and yeast.

Let the mixture stand for about 5 minutes until it swells and foams.

Add most of the flour to the liquid ingredients and stir until combined, saving some for kneading.

Dump the dough onto a floured surface for kneading.

Add enough remaining flour to achieve desired consistency for kneading.

Knead the dough for 8 to 10 minutes until smooth and elastic but still tacky.

Place the dough in a large bowl coated with cooking spray for the first rising.

Cover with a damp dish towel and place in a warm area (approximately 85° F) for 1 hour.

Check if the dough has doubled in size by pressing two fingers into it.

Punch the dough down to deflate it after rising.

Turn the dough out onto a floured surface for rolling.

Roll the dough into a rectangle.

Roll up the dough and place it seam side down in a greased loaf pan.

Cover and let it rise for 1 hour or until doubled in size.
