Boil salted water in a large pot until it reaches a rolling boil.
Add 500 grams of macaroni to the boiling water and cook until al dente, then drain.
In a saucepan, melt 3.5 tablespoons of butter over medium heat until soft and melty.
Add 6 tablespoons of all-purpose flour to the melted butter and stir until it forms a paste.
Gradually add 2.5 cups of powdered milk, mixing in half-cup increments to avoid lumps.
Cook the mixture on low heat until it thickens, then add 1 teaspoon of mustard and 1 teaspoon of salt.
Measure out 300 grams of Colby cheese and add it to the sauce, stirring until melted and smooth.
Taste the sauce and adjust seasoning if necessary, adding more salt or cheese if desired.
Fold in fresh chopped tomatoes and any additional ingredients like cooked cauliflower or bacon if using.
Transfer the macaroni to a baking dish and pour the cheese sauce over it, mixing well.
Top the mixture with broken bread crusts and additional grated cheese if desired.
Bake in a preheated oven at 175°C for about 20 minutes until the top is crunchy.
