5 red or copper onions
a handful of hazelnuts

300 g (11 oz) carnaroli rice

Toast a handful of hazelnuts.

Chop the hazelnuts previously toasted.

Add 5 red or copper onions to a blender with a little white wine and blend.

In a pot, cook the blended onions until the wine has evaporated, covering and cooking for 10-15 minutes.

Add 300 g (11 oz) of carnaroli rice to the pot and toast for a few minutes.

Blend the rice with a little white wine.

Add broth just enough to cover the rice until it is cooked, adding salt and pepper to taste.

When the rice is almost cooked, add the previously blended onions back into the pot.

Add more salt and pepper if needed.

Finish with butter, parmesan, olive oil, hazelnuts, and sage.
