Thighs are juicier and drumsticks are often cheaper.

Heat cooking oil in a pot and sauté green onion, garlic, and dried red chilies. Once it starts boiling, reduce heat and simmer for 15-20 minutes.

Clean the chicken, make cuts in it, marinate in Cheongju, and sprinkle with pepper. Let it sit for about 20 minutes.

Chop green onion, dried red chilies, garlic, and Cheongyang peppers into appropriate sizes.

Coat the chicken in potato starch, place it in a bag, and freeze for about 30 minutes before frying in cooking oil.

Remove the fried chicken, shake off excess oil, and fry again. Then, toss in the seasoning and serve on a plate.
