Prepare 1 pound of Jamaican sweet potatoes by peeling and cutting them into 1-inch cubes.
Place the cut sweet potatoes in a bowl of cold water with lime juice to prevent oxidation.
Bring a pot of salted water to a boil.
Blanch the sweet potatoes in boiling water for about 3 minutes until partially cooked.
Remove the sweet potatoes from the boiling water and let them dry out.
In a skillet, melt 1/4 cup of margarine over high heat.
Add 1/3 cup of brown sugar to the skillet and begin to caramelize it, ensuring it does not get too dark.
Gradually add 1 3/4 cups of freshly squeezed orange juice to the caramelized sugar, stirring to combine.
Add the partially cooked sweet potatoes to the skillet with the sauce.
Incorporate 3/4 cup of honey, 1/4 teaspoon of cinnamon powder, 1/16 teaspoon of nutmeg, and a pinch of salt into the sauce.
Stir the mixture and let it simmer until the sauce thickens and coats the sweet potatoes.
