Use 3 lbs of freestone peaches, about 8 medium-sized peaches, ensuring they are ripe.

Prepare the top and bottom crust by adding 3 cups of all-purpose flour, 1/4 cup of sugar, 3 tablespoons of brown sugar, and 1/4 teaspoon of salt into a food processor. Pulse nine times.

Add 9 tablespoons each of cold unsalted butter and cold butter-flavored vegetable shortening to the flour mixture. Pulse 12 to 15 times until well combined.

Transfer the flour mixture to a medium-sized bowl, then add 2/3 cup of cold water and 1 teaspoon of vanilla extract. Stir until the mixture starts to come together, then form it into a dough ball.

Cut the dough ball in half for the top and bottom crusts. Roll out the first half into a large rectangle for the bottom crust, then place it in a greased 9x13 inch baking pan and poke holes with a fork. Freeze for 10-15 minutes.
