Curtido

In recent years, curtido has gained popularity beyond El Salvador, becoming a beloved topping for various Latin American meals.

1 lb cabbage, shredded
2 large carrots, shredded
1 onion, thinly sliced
1 cup apple cider vinegar
1 tablespoon salt
1 tablespoon dried oregano
1 tablespoon crushed red pepper
2 bay leaves

Place cabbage, carrots and onion in a pot of boiling water, and cover for 10 minutes.

Drain while leaving some water in the pot.

Sprinkle with salt, oregano, crushed red pepper and bay leaves.

Transfer to a sterilized mason jar, cover with apple cider vinegar, then seal.

Refrigerate for at least 2 hours, preferably 6 to 8 hours before serving.
