Curtido

Cultural Context

Curtido is a traditional Salvadoran condiment, often served alongside pupusas. This tangy slaw adds a refreshing crunch and balances the richness of the dishes it accompanies. In recent years, curtido has gained popularity beyond El Salvador, becoming a beloved topping for various Latin American meals.

2 lbs cabbage
2 small beets
2-3 tablespoons olive oil or oil of your preference
2 garlic cloves
2 bay leaves
thyme
jalapeños
6 oz carrots
2 medium onions
4 oz cooked green beans
3/4 cup frozen peas
3 oz apple cider vinegar
1 lb fish (preferably pargo)
3 eggs
1 lb 10 oz tomatoes
1 piece of onion
2 garlic cloves
1 tomatillo
1 8 oz can of tomato sauce

Fry 2 garlic cloves in a skillet with 2 to 3 tablespoons of olive oil or oil of your preference along with 2 bay leaves and thyme at low temperature for a few minutes.

Add jalapeños and let them fry for a few minutes.

Add 6 oz of carrots and 2 medium onions to the skillet and fry until al dente.

Add 4 oz of cooked green beans and 3/4 cup of frozen peas to the mixture and let it cool before adding to the curtido.

Prepare 3 onions by passing them through hot water and add 6 oz of cooked cauliflower, bay leaves, and thyme.

Mix in 3 oz of apple cider vinegar to the vegetables.
