Banting Stuffed Mushrooms

6 Brown mushrooms
4 Tbl of cream cheese
2 Tbl of fresh chopped parsley
1 Tsp of fresh crushed garlic
Ground black pepper to taste
Himalayan salt to taste
1/2 Cup of grated cheese
1 Tsp Coconut oil

Heat oven to 180 degrees celsius.

Grease a baking tray with one tsp of coconut oil and place mushrooms onto the baking tray once stems have been removed.

Prepare filling with cream cheese, parsley, garlic, half of the cheese and the seasoning. Blend well.

Place a spoonful of the filling into each mushroom and top with the other half of the grated cheese.

Bake for approximately 20 minutes or until done.

Garnish with some fresh parsley and enjoy :)
