Ground oats provide a gluten-free option while all-purpose flour is more affordable.

Rinse potatoes and scrub off dirt with a sponge.
Shred potatoes and onions using a food processor or box grater.
Place shredded onions in a bowl with a teaspoon of lemon juice to prevent browning.
Shred potatoes in batches and place them on a clean dish towel to squeeze out excess moisture.
Combine shredded potatoes with the onions and mix well.
Add eggs, matzo meal, baking powder, and salt to the mixture and stir until combined.
Pour off excess potato liquid, keeping the potato starch.
Heat peanut oil in an electric skillet to 350°F.
Scoop the mixture into the hot oil, frying about 6 latkes at a time for 3 minutes on each side until golden brown.
Transfer cooked latkes to a paper towel-lined plate to drain excess oil.
Serve warm with sour cream and applesauce.
