Prepare the sweet and savory sauce by combining 1/3 cup soy sauce, 1/4 cup honey, 1-2 teaspoons sesame oil, 2 cloves minced garlic, and 1/4 cup sugar in a bowl and mix until well combined.
Chop up one head of rinsed romaine lettuce.
Optionally, add organic baby spinach to the dish for extra greens.
In a bowl, prepare spicy mayo by mixing equal parts mayonnaise and Sriracha, adjusting the ratio according to taste preference.
Heat a pan over medium-high heat and add 1.5 pounds of ground beef, breaking it up with a spatula and cooking until fully cooked through, about 4-5 minutes.
Drain excess liquid from the cooked beef.
Add the prepared sauce to the beef and bring it to a boil, cooking until all liquid has evaporated and absorbed into the meat, about 3 minutes.
Add 2.5 cups of cooked rice to the beef mixture and stir constantly for about 2-3 minutes, adding more soy sauce to taste if desired.
Assemble the bowls by scooping the beef and rice mixture into a bowl, adding the chopped romaine lettuce and spinach, and mixing everything together.
Drizzle spicy mayo over the assembled bowls and sprinkle sesame seeds on top for garnish.
