Minced 2 cloves of garlic by smashing them with the side of a knife, peeling the skins, and then finely chopping.
Peeled fresh ginger with a metal spoon and minced it.
Sliced cucumber thinly using a mandolin or by hand, then set aside.
Separated the green and white parts of scallions, slicing the green for garnish and finely chopping the white for cooking.
Heated a stainless steel frying pan on medium-high heat and added a little avocado oil or canola oil.
Added 1 lb of 90/10 ground beef to the pan, spreading it out to allow steam to escape for browning.
Cooked the beef for 3 to 4 minutes until browned, then added the minced garlic, ginger, and chopped scallions, stirring to brown the other side.
Added sesame oil, soy sauce, brown sugar, and rice vinegar to the beef, simmering for a couple of minutes before removing the beef with a slotted spoon, leaving the liquid in the pan.
Added more sesame oil to the pan and quickly wilted fresh spinach with tongs for less than a minute, then removed it from the pan.
Added packaged matchstick carrots to the pan with more rice vinegar and brown sugar, stirring to clean the bottom of the pan, then killed the heat.
Built the bibimbap bowl starting with cooked brown rice, adding the beef, wilted spinach, glazed carrots, cucumber slices, and fresh scallions, and optionally topping with sesame seeds.
