Processed cheese is often cheaper and melts well.
Buy sweet onions that are already peeled and trimmed, leaving the root end intact.
Use a corer to cut down about halfway or two-thirds of the way into the onion, then give it six or seven turns to create cuts.
Make cuts about half an inch down from the top of the onion to create petals without cutting them apart.
Cut each petal in half to make them smaller for better blooming.
Remove the core from the center of the onion to create space for the dish.
Prepare the batter by mixing 1 cup of milk, 1 cup of buttermilk, and 2 eggs in a bowl, whisking them together.
Soak the onion in the batter mixture.
Prepare the breading by mixing 1 cup of flour with spices: cayenne pepper, paprika, black pepper, oregano, thyme, and cumin.
Add another cup of flour to the breading mixture and double the spices for extra coating.
Coat the soaked onion in the breading, ensuring to get it down between the petals.
Double dip the onion by shaking off the excess flour, dipping it back into the batter, and then back into the breading for a second coating.
Place the coated onion on a plate and fan out the petals.
Freeze the onion for about 10 to 15 minutes to help it hold its shape while frying.
Prepare another onion by cutting the bottom off and making cuts for easier breading.
Coat the petals of the second onion in the breading mixture, shaking off the excess flour.
Double dip the second onion in the batter and then back into the breading for extra crispiness.
Fry the onions in hot oil until golden brown.
