2 tbsp peach jam
1 tbsp water

Prepare the tart base by mixing confectioner’s sugar, all-purpose flour, cornstarch, salt, and vanilla extract with unsalted butter until crumbly. Add the egg and mix until a dough forms. Roll out the dough and fit it into a tart pan. Bake until golden.

For the pastry cream, heat whole milk and sugar in a saucepan. In a bowl, whisk egg yolks and cornstarch, then temper with the hot milk mixture. Cook until thickened, then stir in unsalted butter until smooth. Cool the pastry cream.

Make the peach jam by cooking ripe peaches with sugar, lemon juice, and water until soft. Blend until smooth and set aside.

To glaze, mix peach jam with water and lemon juice. Brush over the tart once assembled.
