Chill a fluté glass with crushed ice.

Add some absinthe to the crushed ice for flavor.

Measure and add 20 mils of sugar syrup to a mixing glass.

Measure and add 30 mils of lemon juice to the mixing glass.

Measure and add 35 to almost 40 mils of gin to the mixing glass.

Stir the mixture gently to chill and dilute it.

Pour the mixture into the chilled fluté glass.

Top off the glass with sparkling wine.

Garnish with a lemon peel.

Add a cherry on top.

Spray a bit more absinthe over the cocktail.
