In a large pot, add 3 liters of water and bring it to a boil.

Add 1 kilo of chicken bones to the boiling water.

Chop the carrots, parsnip, leek, celery leaves, and white turnip; add them to the pot.

Season with salt to taste and optionally add saffron or turmeric.

Simmer the broth for about 2 hours, or use a pressure cooker for 45 minutes with 2 liters of water.

Strain the broth and use it for soups or as a base for other dishes.
