Start by heating a big heavy bottom pot over high heat that can hold at least 15 cups of water.

Add 15 cups of water to the pot.

Add skinless chicken thighs and legs to the pot, ensuring they are covered with water.

Add 3 bay leaves, 3 crushed cloves of garlic, 1 small peeled onion, 1-2 chicken bouillon cubes, and a pinch of salt to the pot.

Add 2 peeled and roughly chopped potatoes, 2 ears of corn broken into 6 pieces, 2 chopped celery stalks, 2 peeled and chopped carrots, and 2 serrano peppers to the pot.

Cover and simmer over medium heat for about 20 minutes.

After 20 minutes, add 2 cut zucchinis and 0.5 chopped head of cabbage to the pot.

Add about 5 stems of cilantro and cover the pot again, cooking until the vegetables are tender.
